Pumpkin Cookies- Here's the Recipe

I always get so excited when fall time comes because it means so many things!! 1. Scarves and Boots 2. Football 3. Cozy lazy Sundays 4. Scary movies played on repeat 5. Early foggy mornings like the one today 6. The beautiful changing leaves 7. EVERYTHING PUMPKIN!!! Oh.my.gosh. I LOVE PUMPKIN things. So in the spirit of fall I have made pumpkin cookies and thought I would share with you the recipe. Happy Baking my friends!

The Ingredients
-1C shortening
-2C sugar
-2C canned pumpkin
-4C flour
-8t baking powder
-2t salt
-5t cinnamon
-1/2 t ginger
-1tsp nutmeg
-1 bag semi-sweet chocolate chips (optional, I actually like them better w/o, but if you are a chocolate fanatic then add them!)
FROSTING:
-8 ounces cream cheese (leave sitting out so its easier to mix)
-3/4C unsalted butter
-1LB powdered sugar
-2t Vanilla 

First, preheat the oven to 400. Combine all cookie ingredients {except chocolate chips} in a large bowl and mix until smooth.  Add the bag of chocolate chips and stir in to batter with spoon.  Use a tablespoon to drop batter by the spoonful onto a parchment paper lined cookie sheet. It keeps the cookies from burning


Bake at 400 for 8-10 minutes.
While the cookies are baking and cooling, get started on the frosting.  Combine the cream cheese and butter in a mixing bowl and mix until smooth.  Add the powdered sugar 1/2 a cup at a time, and mix until very smooth. Add the vanilla extra and mix.  Don’t ice the cookies until they are completely cool

They even taste good by themselves. No frosting needed, but that's because I'm obsessed with pumpkin...
